Recipe For Deliciious Homemade Candy; Mint Chocolate Truffles

Making candy can be a really fun activity.  And the results are so worth the effort.  Whether for a special occasion or just for the pleasure of it, turning out your own candy is very rewarding.  Here is a great recipe for chocolate candy--my favorite!  These delicious Mint Chocolate Truffles are from a recipe I found years ago in a Cooking Light magazine.

MINT CHOCOLATE TRUFFLES

1/3 cup semisweet mint-chocolate chips

4-oz Neufchatel cheese, softened

16-oz pkg powdered sugar, sifted

1/4 cup unsweetened cocoa

1/4 cup sifted powdered sugar

2 tbsp semisweet mint-chocolate chips

Place the 1/3 cup mint-chocolate chips in a microwave safe medium to large bowl.  Microwave on high for 1 minute or until the chips are almost melted.  Stir until smooth.  Set aside to cool.

When chocolate is cooled, add the Neufchatel cheese and beat at medium speed of an electric mixer until smooth.  Add the powdered sugar to the mixture and beat until well blended.  Press the mixture into a 6-inch square on heavy-duty plastic wrap and cover with additional plastic wrap.  Chill at least one hour.  Remove the top sheet of plastic wrap and cut truffle into 48 squares.  Roll each square into a small ball and place on waxed paper.  Roll half the balls in the unsweetened cocoa and the other half in the powdered sugar.  Place the 2 tablespoons of the mint-chocolate chips into a heavy zip-top plastic bag.  Microwave on high 1 minute or until the chips are softened.  Knead the bag until the chips are smooth.  Make a tiny snip in one bottom corner of the bag.  Drizzle chocolate over the balls that have been rolled in cocoa.  Serve at room temperature.

Note:  I got this recipe from a 1999 Cooking Light magazine.

Enjoy!

how much are my ty beanie baby originals worth?

i have three ty beanie babies that are in mint conditions and kept in plastic cases i have neon, nanook, and sheets. even though their in a plastic case their hang tags also have a cover and theyve been in the plastic containers since we brought them home and put them in the containers how much are they worth.

The most Neon has sold for in the last two weeks on Ebay is $3.00, though most don't sell for .99 cents..

The bigger Nanook, the beanie buddy, sometimes sells for about $10, but the smaller beanie baby only sells for about $1.50..

Sheets hasn't sold for more then .59 cents recently..

Unfortunately, when things are fads while they're still available for new, they tend to not be worth very much later.. Here's why..
Let's say 100,000 of Nanook was made.. (not accurate numbers, just for example) And usually about 50,000 people would see him at a store and buy him just because they liked him. Because of the Beanie Baby craze, 150,000 people wanted Nanook. BUT, here's the important part, they didn't want Nanook because they actually liked the character, but because they hoped he would be worth money one day.
So, 100,000 people bought the 100,000 available Nanooks and many people sold right away for a quick profit. The people buying Nanook assumed that he would continue to grow in value, and thus it was worth paying more then retail price to own.
But, several years later, all of these people have tons of beanie babies that they bought, NOT because they liked them, but because they hoped they would be worth money. SO, everyone starts trying to sell them. Now, they aren't worth .50 cents because the people who actually liked the character already own one. There aren't enough people who actually liked the character to keep the prices up when all the people who were only in it for money decided to sell..
So, how do you protect yourself from being burned on a craze? Only buy things you legitimately like and would still like if they weren't worth a penny tomorrow.. I have a few of the larger beanie buddies that I bought because I liked them. I still have them in my room and still like them.. I don't know what the high values were on any of them and I don't care that they don't sell for .99 cents now on Ebay..
I hope you only bought yours at the store instead of at jacked up prices, and maybe now you can take them out of their boxes and enjoy them like toys should be..
